About this class

Milk texturing is the part of espresso-based coffee that takes the longest to get right and the shortest time to understand poorly. This workshop skips the overview format and goes straight into the detail.

The science of what happens when milk is steamed correctly, the physical mechanics of the jug and the steam wand, and then a lot of pouring. You will work through three foundational latte art patterns — heart, rosetta, tulip — with enough repetition to leave with real muscle memory rather than a one-time result. The espresso used throughout is from Zermatt Kaffée.

What you'll learn

  • Milk science: how fat content, protein structure, and temperature interact to produce stable microfoam
  • Steaming technique: wand positioning, vortex creation, and the sound and feel of milk textured correctly
  • Microfoam quality — what to look for, what to fix, and why it matters for the pour
  • Pouring mechanics: flow rate, height, jug angle, and the transition from base pour to pattern
  • Heart, rosetta, and tulip — the three foundational latte art patterns

How to book

  • Brew & Taste — Hands-On Pouring — Every guest pours throughout the session. This is a practical workshop, not a demonstration — the majority of the time is spent at the machine with direct feedback. CHF 125 per person.
  • Watch & Taste — Marian demonstrates all three patterns while guests observe and enjoy the drinks produced. Up to 8 guests. CHF 65 per person.

By the end, you will have a clear picture of what you are working towards and a technique to practise from — not just a memory of watching someone else do it.
