Ingredients: Ripe vine tomatoes, cucumber, red pepper, shallot, garlic, extra virgin olive oil, sherry vinegar (sulphites), bread (wheat, gluten), sea salt, fresh basil and parsley.

No heat — pour it straight from the fridge into a chilled bowl or cup. Scatter over the diced cucumber and herbs, drizzle the olive oil in a spiral, and finish with a pinch of fleur de sel and coarse pepper. Serve immediately, before it has a chance to warm up. On a hot Zermatt afternoon you can drink it straight from the cup.
