Ingredients: Oxtail, Rioja Red Wine, Veal Stock, Tomatoes, Onion, Red Pepper, Garlic, Smoked Paprika (Pimentón de la Vera), Olive Oil, Orange Zest, Dark Chocolate (Cocoa Solids 70%), Rapeseed Oil, Salt, Black Pepper.

Keep the bag sealed and lower it into water held at 75 °C for 20–25 minutes — do not boil. From thawed, 15–18 minutes.
Rest 2 minutes, then open carefully over a warm bowl — the Rioja-and-paprika braising liquor is part of the dish. Spoon it over the oxtail; soft mash or good bread catches every drop.
Never microwave — it toughens the meat and splits the sauce.
