Ingredients: Tiger prawns (crustaceans), rice paper wrappers, rice vermicelli noodles, carrot, cucumber, avocado, fresh mint, fresh coriander, little gem lettuce, fish sauce (fish), lime, sugar, garlic, red chilli, sesame oil (sesame).

Serve at room temperature — no heat. Take the rolls out of the fridge 10 minutes before serving so the rice paper softens, then unwrap them gently. Lay them on a plate with the nuoc cham in a small bowl alongside — the rolls are dipped, not drowned. Add extra chilli or a squeeze of lime to the dip if you like more heat or acidity. Eat with your hands, as they do in Vietnam.
