Ingredients: Hot-smoked trout (fish), cream cheese (milk), crème fraîche (milk), fresh horseradish, lemon, fresh dill, capers, white pepper, sea salt, pickled cucumber, rye crackers (wheat, gluten — or seed crackers for gluten-free).

Serve cold — no heat at any point. Turn the pâté out onto a plate or board, arrange the three crackers alongside and the pickled cucumber on top or beside. Press a frond of dill into the surface if you have one, and keep a wedge of lemon to hand. Spread the pâté generously over the rye and crown each with a little pickled cucumber.
