No heat. Take the burrata out of the fridge 20 minutes before serving — this is the one rule that matters, as cold burrata is firm and flavourless. Arrange the seasoned tomatoes on a wide plate, set the burrata in the centre, drizzle generously with the basil oil and add two or three drops only of balsamic. Season the burrata itself with fleur de sel and coarse pepper. Cut at the table so the creamy centre runs into the tomatoes, and eat immediately.
