Founder of Zermatt Kollektiv AG and Culinary Visionary
With a culinary journey that spans Michelin-starred kitchens, luxury estates, and international events, Marian Podola brings over two decades of elite gastronomic expertise to Zermatt.
A Czech native, Podola began his ascent in London’s competitive culinary scene, earning his stripes at the acclaimed Maze under Michelin-starred chef Jason Atherton, and further honing his craft at Gordon Ramsay’s three-star Royal Hospital Road, as well as at The Fat Duck and Dinner by Heston Blumenthal. In 2015 Marian completed his coffee diploma recognised by SCA of Europe and become professional roaster, barista and brewista.
Following his time in top-tier kitchens, Podola transitioned into private and executive chef roles across Europe, curating bespoke dining experiences for high-profile clientele. He has helmed culinary operations for prestigious global events, including the Omega House during the London 2012 Olympics, TAG Heuer’s pop-up chalet at the Paris Air Show, and private hospitality for the Mercedes McLaren F1 team across European circuits.
In 2016, Marian founded Zermatt Kaffee brand followed by Zermatt Kaffee Roesterei GmbH to Zermatt Kollektiv AG at 2019, a pioneering hospitality group that blended fine cuisine, design, and alpine lifestyle experiences. His journey began with the creation of the Zermatt Kaffee Roastery, laying the foundation for a philosophy built on quality, craftsmanship, and authenticity. From there, a family of brands flourished:
2018 - Aroleid Restaurant & Aroleid Lodge
2018 - Zermatt Keramik
2022 - Zermatt Kitchen Ascot
2021 - Zermatt Kitchen Haus zur Brücke
2023 - Zermatt Pho
Each concept carried Marian’s signature blend of innovation and tradition, establishing Zermatt Kollektiv AG as a hub of creativity and excellence. Until December 2024 when he resigned and left Zermatt Kollektiv AG to his business partner, he was the driving force behind the group and its portfolio of brands.
Today, as of 2025–2026, Marian has transitioned to focus on his core passions and most personal projects:
Zermatt Kaffee – the roastery that started it all, crafting signature blends and microlots
Aroleid Restaurant – reimagined as a private fine dining haven for exclusive bookings
The Private Chef – bespoke culinary services, bringing Michelin-level dining and lifestyle experiences directly into Zermatt’s chalets and homes
Fluent in English and Czech, with good working knowledge of German, Podola delivers a seamless, international-level service that blends culinary artistry with warm, discreet hospitality. Whether hosting a multi-course tasting dinner, an elegant après-ski gathering, or a custom-curated event, each experience reflects his passion, precision, and personal touch.
