A pale-red Italian sparkler — Corvina and friends, briefly on skins, fine bubbles, gently fruited. Slender, floral, easy to love. Pink without the cliché.

Food Pairings

Hand-harvested, 10–12 hours' maceration of destemmed berries, very gentle pressing, native-yeast fermentation in steel, second fermentation for the sparkle.
