A Swiss Pinot rosé bled off cold and handled without a pump — pale, glassy, almost weightless. Fine florals, soft red fruit, a breath of cream. Delicate to the point of disappearing, in the best way.

Food Pairings

Hand-harvest and very gentle, pump-free vinification: cold maceration, saignée bleed-off and soft pressing, slow fermentation at low temperature.
